October 3, 2016 – After 15 years in the Wyoming market, Wyoming’s Rib & Chop House—well known for their seafood, award winning babybacks and CAB steaks served on 500 degree plates—has found a new home in Gillette. Established in Livingston, Montana in 2001, the small restaurant company is excited about the opportunity to open in a town as dynamic as Gillette, and to serve the great folks of northeastern Wyoming. Wyoming’s Rib & Chop House and the Schilling family have agreed that the former Jordan’s Steak House will become the restaurant company’s 11th Rib & Chop House and 4th location in Wyoming.
“The restaurant is perfect! We will change very little of the interior, exterior and kitchen. It’s like the building was designed for us.” said Preston Chiasson, the new restaurant’s proprietor. Chiasson is one of the most tenured Rib & Chop House owners with over 14 years of experience with the company. “In the bar area, we are adding several large screen TV’s and a larger beer tap system to offer our guests a better experience and a larger variety of craft beers. In the kitchen, we are bringing in our custom broiler that cooks steaks at 1,800 degrees. Those will be the only changes. The restaurant was spotless, and the decor makes the perfect setting for a casual dining experience. I don’t think we will take a picture off the wall.”
Wyoming’s Rib & Chop House plans to open in the middle of November. They will start hiring October 17th, and training will begin November 7th. They are planning on hiring more than 50 full-time and about 25 part-time employees. Hours of operations will be 11:00am – 9:30pm daily in the winter with expanded hours in the summer. The patio, with five outdoor fire pits, will be open for summertime once weather permits.
The menu will offer all the items that have helped the concept grow, including a separate lunch menu and gluten free menu. The bar will feature specialty drinks, their famous margaritas, craft beers, complete sports coverage on HD big screens and smiling bartenders.
The opening date is not set in stone, but the Rib & Chop House will announce it through local and social media once the staff is fully trained. “We are very excited about the opportunity to be in Gillette. What a great community!” said Chiasson.
